255/50/16 Drag radial

or

275/40/17 street (summer tire)

Looking to keep the car looking stock, I drive this car less than 3000 miles per year. The Z is a mild head/cam/bolt on (LT1) with a 3200 stall and 3.23 gears. Possibly around 375 at the crank.

Which is the better tire option for less tire spin on the street?

a 255/50/16 Drag radial is not going to look stock on a car. so if that is your objective then the only other option is the get a 275/40/17 which they make several sticky tires in that size. NT-05R and 555R for just a couple.

I was thinking the Nitto 555R. Would that offer better traction than say a Hancook, Falken, Goodyear 275/40/17?

YES, the 555R is a purpose built tire. a drag tire.
