You should be able to go to around 26.7 depending what wheels/offsets.

u can go bigger than a 26.7. Plenty of guys running 28" tires. i ran 27" QTPs no issues.

I have a 28x11.5 m/t e/t street on mine on a 15x8 wheel with 5 and a half back space I also cut 2 coils off my back springs and they fit fine I did roll the fender just a little just to make sure I would post a pic but I don't know how

11.5" on an 8" wide wheel..?? A 11.5 is pushing it on a 10" wide wheel.

It's the same dimension as the 28x10.5 m/t slick. And I already had the wheels and got a really good deal on the tires I agree the 10" wheels would probably be better but they work out good
