Are you interested in maintaining stock tire diameter? If so, a 235/60/15 won't work, as it's 26.1" tall (vs 25.65-66" for the stock tire sizes).
Having said that, a 235/60 will fit a 15x8" wheel, but it's not an optimal fitment. A 15x8" would be better served by a 245 or 255mm tire (some even go as big as 275mm).
Unfortunately, there aren't many 50 or 55 series tires in a 15" rim diameter, so your options for maintaining stock tire height while still properly filling out an 8" wide wheel are limited. I think Nitto has a drag radial in a 275/50/15, which is only marginally taller than your stock tire height, and is at the upper limit of what can be fit on a 15x8 wheel.

Either way, I wouldn't do a 235/60 up front with a 275/50 out back, since that would make the front tire 1/4" taller than the rear tire. Front tires should be equal to or shorter than the rears for proper appearance, IMO.

Stock tire size for an SS was 275/40/17 (25.66").
So if the 15x8s are for the front and you're looking for a tire height that's a good match to the rear, a 225/60/15 would be best, since that is 25.63" (basically stock height) and also slightly shorter than the 275/50/15 for the rear (25.83"). The only issue here is that a 225mm tire is a bit narrow for an 8" wide wheel. It can certainly be done (in fact, some C3 Corvettes came stock with 225/70/15 tires on a 15x8" wheel), but really you'd be better off with a 15x7" wheel for a 225/60 tire size.
