anyone rub with this tire/wheel setup A c5 z06 18x10.5 with a 58 mm offset with a 315/30/18?? Or should I be safe and go with the 295/35/18? Thanks in advance!

Be prepared to do the BFH mod with the +58 offset,So I would go with the 295 to miniumize any possible rubbing problems. Or get some arp wheelstuds and 1/4 inch wheel spacers 3/8 would be even better, and 1/2 would give you the best offset; +45.3. But IMO would not go any wider then 1/4 inch spacers,to cut down on the possibility of breaking off some wheel studs.
