Default Should I be hitting 12's yet?

First off let me say that I am in Colorado where its a mile above sea level. I know I will not hit 12's here, I am just looking to see what Id be running at sea level.
Mods are in sig for the most part. Its a convertible, 12bolt, SFCs, LCAs M6 spec 3 clutch, 17" wheels street tires and the rest of what is in my sig.
Where should I be at as far as MPH in the 1/4 go?

Well, it is bit hard to say since all the tracks are bit different and we have no idea of your driving abilities.

If you have time sheet from your location, it would help if you could post those numbers or time sheet.

But my guess is ~12.8@111 or so.

with the 12 bolt as long as you have some tires you should have no problem running 12's at sea level

A hardtop with 4:11's and headers can run a high 12 at sea level. Your a little heavier with the rag top, but should have no trouble getting in the 12's down here. I'd say about a 12.8@109
