I need advice on how much hard block to use

I am building another 6.0 motor and I am going to have the block partially filled with hard block. What I am wondering is how much do I tell them to put in? I am also having them dowel the main caps in the block. How many do I need? 2 per cap or two per side? Also do I need to use a solid dowel or a roll pin type?

Usually fill half the block up to about half of the water pump holes. Just a single dowel pin on each side will. As far as dowel pins it is your choice. They both will work but room will limit your choice.

I normally fill to the bottom of the lower water pump hole. This is almost exactly halfway up the water jacket in a 6.0L iron block. Also, I run billet caps with 2 dowels each, between the two bolt holes.
