As for the wheel & tire combo...
I use cheap steel wheels with Blizzak WS-50 winter tires. Blizzak stopped making the WS-50. They now have the WS-60 to replace it. It is slightly different with a higher speed rating. I don't know how it compares.
1st, I am jealous of your garage setup. I have no room to do s*** in mine over winter. I like the bird, looks a lot like mine, and I'm digging the exhaust.

Here in Missouri its been really cold, I havent drove my car for over a month. I got to drive it on my birthday in early Nov. and that was good enough for me. Luckly it was 70+ outside and really nice. But now that the snows hit and they salted the **** out of the roads, my junker sets inside!
