Default Replace Carpet

My carpet is old and possibly very soiled. I an considering lightweight carpet, however I am devising an alternate idea of having most of the stock carpet removed and implement a coating such as Line-X. I understand that this would make the interior a little sparse, however I wouldn't need to continue to use floormats. I do plan on retaining the stock centre console and the rear seats. My question would be, how much more sound would be emitted with all of the carpet and foam backing removed? Would there be any coating that would reduce most of the noise, if not all?

Also, I have a tendency to drive with the windows down most of the time. I an usually not annoyed from road and tire noise, however I do desire to reduce some. Another reason I am considering this option is to reduce some weight.

ALOT MAN. I had my carpet out, and decided to try it out. Uhuh, not if it's your daily driver.
