Water Temp Gauge

Water Temp Gauge First I was under the impression the factory Temp Gauge is just a hot/cold gauge, And not actual temp? True or False
Ok so I bought a Mech. Temp. gauge, But I only found one possible area to mount it (in the head, Where the factory sensor is) Is this the only spot? and If I disconnect the factory unit, will it create a problem?
Can someone shed light on this for me, trying to prep car for major mods, but need accountable Gauge readings.
