Default Silverado 6L80 Manual Mode

Hello, I have a 2011 Silverado 5.3 with the 6L80. I am pulling my fairly tall camper, ~7000 lbs somewhat successfully, however hard on fuel. Once in a while, it will be able to maintain 5th gear on flat ground at 55+ mph, and it'll pick up a few mpg. I think that 5th is virtually right on the torque curve and this is always changing with slightly different ambient.

Is there a way I can lock my manual mode in 5th and just floorboard it and if it loses enough mph manually let it drop to 4th? Currently the manual mode really only sets the top gear.

I found this article and image to be about what I am describing.

Setting the tow/haul shift parameters to your liking through a tune is probably what you'll have to do.

Any idea what tuners have that ability?
