How do you pick a converter's stall speed?
Have not gotten into researching converters much, but I have an A4... so from what I hear, it's a must-have.
I just have a lid + catback now, but am hoping to keep going from there. Isn't the converter dependent on the cam? Should I get the both at the same time ($$ ouch)?
One more quick question, if I had to give my keys to someone (think life-or-death only
) can someone, unfamiliar to fast cars drive a car with a converter without running into too many things?

You can pick a converter by itself.
Doing the lid and catback helped you make some more power.
I think that converters come in three flavors...
1) mild increase, want it to hit harder but I don't want to have problems with the dealer.... so like a 3000 stall or less (PI2800, not the PI3200, etc... )
2) good performer, don't race at the track much, but want to get a major increase... 3200 - 4000
3) Drag racing is all I think about... 3200 - 4500.
The #2 stuff works better from a high speed roll too.
