I'm curious to know something.. If I run a much larger stall than stock, like say a 4000 stall with a nice size tranny cooler would my transmission operate at the same temperature as it did with the stock TQ converter with the stock cooler?

Yes it would. I actually run two coolers due to the hot summers here in Arkansas. I typically see 150* cruising with the converter locked and ~180-190* in stop and go traffic. In the winter months, I see 100* cruising and ~150* in stop and go traffic.

Converter in sig, 28k cooler and in the heat of summer have never seen temps over 180*. I have never logged in the winter, but know it has to be much cooler. I do not use the factory cooler through the radiator anymore.
