How hard is it to convert a non-lock up 700R4 to a lock up one?

The 700R4 is very easy to converter to a lock-up if it has been converted to a nonlock-up. You will need a converter lock-up valve and spring if the builder used a kit to convert it to a nonlock-up. You may need a lock-up solenoid. The input shaft should have a nipple with an o-ring on it; some nonlock-up converters require the build to cut this portion off. The only thing left is that you need a lock-up converter. I hope this help you.
