What stall speed torque converter will gain a little FUN???
Car is a stock 1970 Chevelle SS clone weighing 3600 empty
STOCK 2004 Buick Rainier all aluminum 5.3L LM4 (62K miles)
STOCK freshly rebuilt 4L60e transmission is from a 2004 van
Rear axle ratio is the stock 1970 Chevelle 2.73 open
!!!
Car will be used for long haul Power Tour travel, so mileage is important BUT want to have a little fun time to time from the traffic light...
???

as long as you can lock up your converter you'll be fine with any choice really.. Can't really go too big with a converter IMO. Most truck guys which have a setup like yours like a 3000-3600 stall as a 5.3 makes peak torque around 4200 rpm ish.

Not sure what your tire diameter is but maybe you want to go to something like a 3:23:1 gear. Maybe more depending on your tire diameter.

4L60 has .7 to 1 fourth gear (Tires 225/70-14 (26 tall), 2.73 gears at 1605rpm=65mph)
