I'm am converting my 65 Cutlass over and the original starter had 3 wires, red, purple and yellow. I get that I need the red and purple... What do I do with the yellow one which I presume used to go to the HEI coil somehow?

The car will be run with Holley EFI including the ignition

That's likely the ignition resistor bypass wire,you can just eliminate it.
