I'm going to swap my truck manifold for an ls1 style. My questions are: will the truck throttle body work on the ls1 manifold? And does the ls1 style have a map sensor on it like the truck does?

The truck TB will go right back onto the car intake. If you are staying with the truck water pump you will need to tap the outlet over a hair with a rubber mallet to clear the car intake's lower profile. The car intake has a similiar provision for the map sensor. Althought a different design they seem to interchange fine.
