Hot heads??

Hot heads?? Well i took the 300ZX (LS1) for its first drive yesterday and it felt great. VERY responsive! I had a couple problems though... The first being that it seems to drive perfectly and have tons of power right off startup, but when i go to slow down, it seems to slip into a "safety mode" where it runs VERY rich. Do you think that will be fixed when i have the ECM reprogrammed (I took off the rear O2s as well as the emmissions control devices)? Second thing that happened...i have not worked with LS1s before and dont know how hot the heads get. When i pulled it back in the garage...the heads seemed to be very hot. I couldnt touch them without getting burned. To fix this and ensure that coolant is flowing through the heads, could i pull the thermostat and let it run without that restriction?
