manifold exhaust temps major difference

manifold exhaust temps major difference Playing with my temp gun today and decided to see what the exhast manifold temps were.... well they were all over the place. Ranging from 240-330! It is a LS1 in a 80 vette. The fans kick on at 190-195, engine temp gauge says 180 while my OBDII device says 190-195.
Why is the exhaust so off? Maybe I measured it wrong? I put the laser right between the heat shield and the cast iron and measured the iron. The part that was the hottest was more of a square on the driver side... cylinder 3 & 5.
