Great looking engine you have there. I would say you are around $3k to the right buyer for the package deal but you'll get a lot of low ballers who wanna steal it from you. You'll probably wanna go to car shows with a forsale sign on the engine to get the best offer. If that doesn't yield good results then I would agree, pull the injection and sell it on ebay and then sell the rest of the motor separate unless you have really good heads on it then I would pull those and sell separately as well.
Are you wanting to upgrade to the LS to get full tunability for a forced induction application? If not I'm not sure how much you would benefit from the swap since you already have fuel injection.

3k? Wow, pretty high number. I was going to say $1500.00 tops. Even though there's 2500 miles on it, it's now a used engine. for 3k you can pretty much backyard a ls swap.

I let my 406ci SBC go intake to pan for $2000 and was running 11.3X's at the strip, so a proven combo. I didn't go super fast selling 
As yours is a 350 and a basic rebuild... $1000-$1500ish
Injection add another few hundred.
