Default 5.3L LM7 swap in Jeep cooling issues

2003 Stock LM7 70,000 miles, Stock 186 degree thermo and water pump. Running a mechanical fan with a conversion cross flow radiator from superior radiator. The radiator measures 18x18x2.25

Swapped the motor in AUG of 12'. No cooling issues ran 195 all the time. Until this year when the OAT temps starting getting in the 70's. I have noticed temp creep on the interstate. The faster I go the higher the temp gets. 70MPH will get the temps up to the low 200's. I did find a bad fan clutch which I have replaced and it didn't make any real difference.

Idle and city driving temps are between 186-192. ONly change I made over the winter was going from a 35' tire to a 37' tire.

I'm not sure what to look at as far as what would cause a highway temp creep. I have checked my LTFT and they are between 3-4%. Any ideas? I was thinking of dropping in a 180 degree thermo.
