Default oil temp sender in Holley 302-2 pan

I have an oil temp sender that I have used in my car before and I am looking for a spot to put this thing. I am planning on putting my oil pressure sender at the back of the block and as far as I can tell the only place to measure oil temp is at the bypass cover on the oil pan. Is this ok? What does this cover do? Will the sender block flow? Is there a better spot for this?
