Installing headers - use anti-sieze?
I learned not to use stainless bolts on header flanges. The heat destroys them in short order. Anti seize is no help there.
The comment about heat rating is interesting, didn't know there were different kinds.
As for repairing broken bolt holes the one big advantage of aluminum heads is they can be easily welded. Probably more of a machine shop repair though.
I learned how to take the time to prep the broken bolt/stud for drilling so about 95% of the time I can drill it in a two step process and then extract it in just a few minutes. Some are just a stubborn and take a little longer. This is one reason I like to use studs rather than bolts in certain applications. I've never broke a stud while trying to remove the nut and rarely need to remove the studs themselves.
personally, i try to use something on every threaded fastener. either anti-sieze or lock-tite.
