Default autometer coolant gauge/adapter reading wrong?or cooling system issue?

ok guys im not far off from having my car on the road but am hitting some bumps in the road. I start the car ( carbed lq4 with cam) and let it run and temp gauge immediately starts to climb , after only about two minutes the gauge is headed for 240-250 degrees so I shut it down. at first I thought the t stat wasn't opening then I confirmed it was good but put the car back together with no t stat to verify coolant flow. when watching the radiator coolant flows through the rows but not very fast , just kinda trickles out( not sure its suppose to be fast?) the problem is when the gauge is reading in the 200s I can stil pop the bottom hose off and the coolant is hot but not to hot to touch so whats going on? is the sender maybe reading the temp of the adpter bolted to the head which gets hot very quick or do I have another problem.

Do you have the steam vents tied back into the system or blocked off? It's possible you've got a lot of air trapped in there.

Not sure if I got this right but were you running without the T stat when it overheated? With the t stat installed and at operating temp the water is then forced to go thru the radiator but before it gets to operating temp water will recirculate (take the path of least resistance). If you were running without the T stat installed then water is never forced thru the radiator. I have also found a non-contact thermometer (now cheap at HF) is a very handy tool in such cases.
