I'd be more worried about the possible major trans hump floor sheet metal surgery required for the 4L80E than the exhaust manifolds. Or are you worried about the height of the VORTEC intake manifold?
The intake will most likley fit, but those exhaust manifolds really only fit the trucks thy came in, and are generally usless on a swap, especially on a car.
Truck manifolds probably will not fit. F body manifolds might fit well or shorty headers are fairly affordable. Your trans tunnel is going to need some modifications to fit the trans and the truck oil pan will hang down pretty low so you may want to consider a better fitting oil pan for your application.
4L80E fit in my '55 with room to spare but the truck manifolds are going to be too wide at the back outlet to fit inside the frame. I modified a truck manifold on the driver side with a V band and got it to fit but it's not going to fit otherwise.
