The heater hoses separate the high and low side. This is why there is flow through the heater core. If you loop them, you are just circulating coolant between the two. This by passes the radiator. Its not a ton of fluid, so many do it. But for peak efficiency you want to block the heater lines.
Also... if you remove the thermostat, you want to put a brass freeze plug in the water pump that separates the high/low side passages. This results in the most efficient setup that gets the fluid in and out of the radiator the most quickly. Its not the best at keeping moisture out of your crank case, emissions, or warming up quickly. But it will cool the best.
The thermostat is a 2-way valve. It blocks off the passage in pink as it opens. So it needs blocked permanently if you remove the thermo.
