Other question is it better to get the whole car or try to purchase piecemeal. Looking for a Corvette LS1 as it has the lowest profile in stock form.

as far as control of the motor you could run a standalone harness with factory PCM or one of many aftermarket standalone options
not worth getting a whole vehicle to just rob a motor from IMO
and really you can use any LS long block but you will want the corvette style accessory drive and car style intake manifold for the most clearance
