Talk to John at SpearTech. www.SpearTech.com

He can build you a custom harness from 100% stock to just the bare minimum. Plus he can program the computer for you.

I just got mine running and it was a breeze with just a hand full of connections with clear instructions and awesome support.

Converted,
If you really want to keep all those functions, you might be well served by an original factory harness with the functions you do not want removed. There are pinouts available to identify all the conductors, and it is just a matter of reemoving the tape from the harness and pulling wires out if you are willing to spend the time. Most people that buy aftermarket harnesses usually buy them because they want only the bare bones necessary functions, and are not willing to spend the time to modify an original. After reworking thr harness, you will still nedd to have the PCM program modified to accomodate any changes that you have made to the harness.

True, modifying a factory harness is doable, however some people are intimidated by wiring. So if you are bold enough to learn how to modify a factory wiring harness you will learn alot. If you decide that isn't what you want to do then purchasing a harness already done for you is the next best thing.

Don't reinvent the wheel.
