I emailed Speartech. They replied immediately. They don't have a wiring harness that will do the whole truck. They do have one for the LS1. Can I not use the original harness and just have the computer reprogramed?
You can use the chassis harness for the truck to do lights etc, but you will need an engine harness to control the motor and connect to the ECU. If the wiring in the truck is good now, use it and get the engine harness from Speartech, that's what I am doing with my project.

There are a number of companies that make wire harnesses inclkuding fuse panels. Painless wiring and Ron Francis are two that come to mind. THey are well engineered and marked to make the wiring easy to do. If you go to Google and search for Street rod wiring kits, you will find a bunch of them. I know that Painless also has an LS1 Engine wiring harness, but have heard their technical support on that item is not as good as people like Speartech. Search this forum for Painless Wiring harness, there are several posts I believe.
