in an unpressurized system the radiator is open to atmosphere and if the water gets over 212 degrees it will boil out.
In a pressurized system as the coolant gets hot and expands it pressurizes the system which will raise the boiling point of the coolant. I think with a 16pound cap it extends the boiling point to 260 degrees.
