The nipples on the throttle body for the coolant crossover don`t need to be used either. They were designed to have hot coolant flowing through them to warm up the TB/air during clod weather. A lot of people bypass the TB to get a few more HP out of the motor because the air is no longer being heated up. If it is going to be a daily driver and you live in a cold climate I would consider hooking it back up, otherwise don`t worry about them. The hose that comes from the cylinder head should be directed back to the radiator or to a T in the heater hose, or some people drill and tap the water pump. If you don`t have an extra fitting on the radiator cap side tank for it there are pictures of where everyone drills the water pump or T`s into the heater hose on here. You should be able to find them with a search.
Power steering cooler: You don`t need it, but you could use it. If you decide to use it hook the low pressure return line to it.
I'm using the throttle body coolant line, tapped into the top of the water pump. I've had a throttle body ice up in winter on a different car so I'm taking the safe route with it now. If you use the throttle body coolant line, then the hose on the drivers side in your image connects to the tube on that side of the throttle body, and the tube on the other side needs to connect to the radiator or something--I drilled and tapped the top of my water pump for it as I saw on another thread here. If you don't want to run the throttle body coolant line, then you would leave the tubes coming from the throttle body (or capped if you want, shouldn't matter), and run that hose (the steam crossover/return) to the radiator or something (or water pump or heater hose).
You shouldn't need a power steering cooler unless you are doing serious road racing. And if you are doing serious road racing, you probably want a standalone cooler for the power steering.
