drive by wire to cable swap?

drive by wire to cable swap? i have done a few searches and there is almost too much info for a new guy like me to digest.i just cant seem to find the answer im looking for.
what is involved in swapping from drive by wire to a cable set up.
im putting a 2004 5.3 into a 1970 k5 blazer.trying to use the factory 04 harness.i know ill have to swap throttle bodies.what about wiring harness and programming?can it be done?what do i need to do?
like i said im sorry to bring this up if it is often discussed,but i was unable to find a straight answer in the searches.
