Opinions on Heads and Cam for LS2
AFR Mongoose Heads: 205cc Intake Ports, 66cc chamber, 3 angle grind, 2.02/1.60 valves. 300 cfm @ .600 lift
Comp Cams Energy Extreme: Hydraulic Roller, .580x.590, 114 degree, (@.050in)…230 deg in/232 deg exh duration
Stock Compression: 11:1
Stock Manifold
Upgraded injectors to 30 or 40 lbs.
A couple people I've talked to mentioned using Ford red top or green top injectors. Mainly for the price, but I can't find any info on whether they will actually work on an LS2. Any suggestions?

Are you asking wheel hp, fly hp, or engine hp on a dyno?
That's a pretty mild cam and heads for an LS2. Not that there's anything wrong with that; just an observation.
I'm going to use th '04 GTO as a base reference. It was rated at 350 HP at the fly, so we'll assume that's the same measurement you'll be using. With the current combo, I would think that 385-400 Fly HP is reasonable.
However, for more power, you could definitely switch to a more aggressive cam.

Side note: I don't know if you're using a T56, but it's factory rated at 450HP. Be careful you don't overload the tranny in any case.
