Motor
The motor you are describing is an LT1, not a LS1. The water pump is driven off the camshaft with a shaft that comes out of the timing cover. You can get aluminum intake manifolds for a 4 barrel carb from a couple of aftermarket sources, I think GM performance is one of them!! Hot rod or Car craft had a write up on them a few months ago and shpwed them to be pretty stout motors!!

LT1-LT4 Modifications
You might want to replace the Opti-Spark before it craps out on you, they aren't very reliable. A few other common mods are the LT4 head and cam upgrade, which a lot of people do but doesn't offer the greatest hp / dollar ratio, nitrous because LT1s have a rep for taking a lot, and headers, every LT1 sounds good with some exhaust work!
I wouldn't carb the motor if I were you, lots of people want to do it because LT1s are like old school small block chevys, but I wouldn't bother unless you live in a moderate climate, fuel consumption doesn't bother you, and you want the old look.
