Default Carbon buildup, the water helps it from building up carbon

Not quite. They are to keep the throttle body from icing up in cold climates, one reason why most guys delete these coolant lines as they are not really needed in most areas.
The TB does not affect the A/F ratio, so a rich mix won't happen, and the CATALYTIC converter is not affected.
You really should read up a bit more..... Cadillac converters??? Right.....

Chemistry lesson bud....
Combustion of anything results in CO2 and H2O at minimum, there's your source of water in the exhaust, not from the engine coolant. If you think the steam line on the TB injects it into the engine, yea...

Oh, and Catalytic Convertor..
