why does my oil temp sensor say "LOW"?

My oil temp said LOW this morning as well on my way to work though it was 7deg with -12deg wind chill. It stayed that way till I got to work. When I left and fired it up it read something like 30deg so it must have been a little frozen or something this morning. Was it really cold where your at lately?
