My bars are just like that. I cut a slit in them in the shortest spot, right in front of the bars. So looking from the hatch you don't see it.

any trick to cutting out the grills perfectly to go around the bars?

A trick we used when doing the package tray to go around my roll bars in the Nova was to take out the area where the bars will go (in this case the grille) and draw a template on heavy paper (cardboard can work too but can be tougher to bend right). Once you get the perfect fit and hole location (may take 2 or more times, and don't be afraid to do it multiple times) then you trace the hole otulines on the grille and trim it out.
