Putting 1 Fan on a Switch?
I tried to cool it down with water and ice thinking it would react like the old school engines, but it slowed down. Talked to a few other old guys that have been racing since the 60's and they tried the same thing with water and ice and it slowed their LS's down too. These engines like a little heat.
Prob more info than you needed... and I know there are after-market kits out there that are plug-n-play for this application.
Anyway, its simple enough to ground one of the wires to the fan relays to turn on either the high or low fans on, thats all the PCM does, If you search around someone had a real nice write up how to do it here. You just have to run one wire under the hood to to a switch that grounds the low speed wire off the PCM, you will get a check engine light if you leave the switch on with the car started though, can easily be shut off with a tuner.
I can turn them on manually or when it needs to the computer will automaticall turn them on.

Green = Fans are on low speed

Red and Green = Fans are on high speed
