Depends on the bore. Anything under 4.065 use LSA/LS9 Heads. For a 3.905 and below, 243s are good. For 3.800 and below 799s.

With the lsa/ls9 heads. Are the decks thick enough to handle 20+psi?

A stock 317 can handle 23lbs. The key to keeping heads down is in the tune. Just from my experience

Yes, the LSA/LS9 can. It is all in the tune though.

Why are 799s better than 243s on a 3.8" bore?

243s and 799s are the same cylinder head, some 4.8/5.3s even had mixed casting numbers on the same motor. Only 243s that came on an ls6 engine from the factory had the sodium filled valves, the rest have standard valves.

317s are essentially a 243/799 casting with larger combustion chambers on the 6.0 LQ4/LQ9 engine.

If you're boosting just go with any of these 3, best bang for the cheapest buck.
