what tires do you guys use/suggest?

Launching!
I'm by no means an expert, but a friend of mine has a very similar car to yours (even the same color!) but ls3/ no turbo. His car also lights them up really easy, especially if you're not pointing straight. I think a lot of it is the light weight of the car as well as the suspension not effectively 'planting' the tires. Are there any rx7 boards that have a good base of knowledge with v8 swaps?
On topic, any drag radial should help a ton (you have the NT05 or NT05R?) over a normal street tire. You just lose any longevity with them though.

Mickeys as well. Used the street et's when I had 17's and now run pro radials on my 15's.
edit: I just noticed you have a 6speed. Keep in mind that most of us run automatics so pairing it with a drag radial is going to net us better results than a guy with a 6speed.

NT-05's are not sticky.
I ran a 275/40/17 NT-05R drag radial and it put the power down 1000rwhp in a similar RX-7 setup (3.31 gears out back)... but at the strip it was inconsistent and out of about 8 passes only ran a high 9 once (9.87). I switched to 275/50/15 M/T ET Street drag radial and every pass was in the 9's. It also did some low 9's.
Any tire that is cold needs some heat in it. High HP cars on the street don't do well with cold pavement either. You should also look at a boost controller if you aren't ramping it in.... that is another issue.

I use them on the street/highway all the time and they hook great. I dont do a burn out on the street. At the strip I do a very short burn out and thats all they need.
Have not been on an airfield. I have had pretty much all the major drag radials in the same size and these definitely work the best. They wear great too, I cant believe I have about 1000 miles and 10 passes on them already. They still have plenty of life left.
