Default 3 bar map sensor and maf sensor to get car running?

So I am in the process of turboing the car with a new 5.3 in it, will be switching to speed density tune with a 3 bar map sensor. Now for starting the car up to make sure everything is good and loading and unloading on trailer to get to a shop for a dyno tune, am I able to install the 3 bar map and just run it with the maf sensor in place and just remove it once at the shop for the new tune?

Just to clarify for us, the engine is new, the PCM/ECU has a tune in it related to what? The prior LS1? Is the 3 bar Map sensor already on the engine in place of the prior 1 bar ? Has the tune been altered at all to know the MAP sensor it's reading is a 3bar vs 1 bar? Just trying to get an understanding of what the current setup is before saying anything.. The way I'm interpreting the statement below is,
  1. The new engine is a 5.3, replacing an engine that wasn't a 5.3 (LS1?)
  2. The ECM/PCM was setup for the prior engines fuel injectors, Cam and MAP sensor(1 bar?) and is not speed density.
Is that incorrect?

Yes that is correct. Basicly just wondering if I leave the mass airflow in if it will still read and run right with the 3 bar map on. Or if I should just swap it before the tune

Definitely do not swap the 3 bar map sensor in before the tune is setup for a 3 bar . I know it's a bit of a hassle to reach back there and replace it but the engine will run like absolute dog crap if the PCM were to read the 3 Bar Map sensor when it thinks it's reading a 1 bar. I'm not sure if it would flood the engine with fuel or lean it out but it would not even be close to running correctly or acceptably. Just having the incorrect linear and offset (Usually provided on the MAP sensors data sheet) on my 3bar SD tune back when I first swapped made it where it would not idle. Flooded the engine on startup. Plugs were wet fouled and blackened like they'd been burning coal.
