IAT fluctuations

IAT fluctuations I have a Whipple SC/IC setup on a 8.1L - running a Volant with forced air flow, not ram, to keep it cool. I am reading IAT with a scan gauge setup.
Normal operation at 60 MPH is IAT running at ambiant + 7 degrees - example this time of year about 70 degrees, when I step on it [not WOT] the IAT jumps to 110 and then backs off as the engine responds. I have a standard OEM GM MAF with screen. The swings are abrupt and I have checked for any leaks in the system, none found.
Is this normal or is the Whipple piggyback messing with the IAT.
If it is not right, what are my options.
