Add an intercooler = how much more psi?

Add an intercooler = how much more psi? I have a 99 camaro SS which is pretty much stock except it is a 382 stroker with a forged crank and pistons which have 9:1 compression. I also have an aftermarket fuel pump and 60lb injectors. The car is using an STS kit and runs good at 11psi with the methanol turned on. I upped the boost to 14psi and the car ran much worse than it did at 11psi. As stated, I have the methanol injection but I do not have an intercooler. I am assuming that 14psi is too much boost and creating too much heat which is causing knock and the ECU is retarding the timing. Does this sound right? I do have a FMIC (large 3" OBX) now and will be installing it on Saturday. Since I now have an intercooler, should I not worry about using the methanol anymore and can I run 14psi or is that still too much?
Meth If the meth is already there leave it. It will only have more benefits than draw backs.
