Deck thickness

On heads, how do you measure deck thickness. Like AFR says their heads have .75" deck which is great for boost. From the deck (surface that bolts to the block) to what = .75"?

is just the thickness of the slug of Al on the flat side around the combustion chambers of the heads. it aids against lifting the heads

I totally get that, but say you take a x-sectional slice of the head, where does the deck thickness "end" when they quote .75". Doesnt matter anymore to me, this was an old post, but nobody ever answered.
