Default Head gaskets - how thick is too thick?

I'm trying to avoid piston/valve clearance in a NON-BLOWER car (motor only). My new LS6 ported heads are milled .055 and the cam is a 560 lift.

What are the downside risks of running a head gasket at .100 when the stock gasket is .060 thickness? (The NA boys said you FI guys run thick gaskets a lot....)

Does this thick gasket potentially lead to detonation, blown head gaskets, bad breathing characteristics, poor valve train alignment, or other reliability or performance issues?
