svo #30 and no tune
I will be doing heads,clutch and injectors and need to break in the clutch for 500 miles before I have it dyno tuned.

HOW rich?, Im not sure..
You'll still be able to drive it... I just wouldnt do it for any more than you HAVE to... Running overly rich for prolonged periods of time will kill O2 sensors
and kill Cats in a big hurry....
Gas mileage will obviously get worse too....
So yeah.. you can do it... but it will be pretty rich...
If it were me, and will be in the future, I will swap out the injectors and flash a corrected tune prior to starting the car and will make certain to tune the car immediately at that point.
It should only take 30 minutes to swap the injectors, so bring a wrench or two and swap them when you take the car to get tuned.

I wouldn't worry about getting it tuned because your clutch isn't broke in. It is not like you will be launching hard with it. Doing a few dyno runs isn't going to harm it. Heck I have went to the track shortly after replacing my clutch. I wouldn't change the injectors out until you actually go to get tuned though. Like they said it is easy and only takes about 30 minutes to do.
