The 3 channel rear wont work because the reluctor ring needed for the ABS is mounted to the ring gear, where in a 4 channel rear it has a reluctor ring on each axle near the caliper mount.

Can I just convert the 4 channel to a 3 channel by deleting the traction control?

traction control cannot be deleted,it's part of the ABS system.
to convert a 3 channel rearend to 4 channel, the axles and backing plate assemblies from the 4 channel rearend have to be installed to the 3 channel rearend.

Which would be better....swapping the axles and backing plate or just swapping out the chunk?

The gears I have now whine a little but the biggest reason I'm switching is because I'm going from a 3.23 to a 3.73.

Converting your 3 channel to a 4 channel is fairly simple, I had to do it with the rearend in my Z now. You'll need the 4 channel backing plates with the speed sensors in them, the 4 channel axles with the reluctor wheels and the 4 channel wiring harness that hooks to the 2 speed sensors.
