Advice for an S60 setup
I plan to get the car around 450 or so to the wheels, and its more or less a daily. That being said, I don't think a spool is what I'm looking for... but the complete assemblies they offer seem to just be spools. Will I need to build my own to get a Trac-Lok or Posi? I'm a bit out of my element here, I could really use a little help figuring out exactly what setup I need and all the parts to accompany it

If the vehicle is 3ch equipped and you want to keep it then select that option or if it is 4ch equipped and you want to keep that option choose yes. If you are 4ch equipped and do not want to reuse your factory reluctor wheels then choose to purchase new ones or you can send your factory ones in with your backing plates.
I will add that when sending in backing plates this is the time to clean them up and paint or powder coat them as they get mounted to the housing in the same condition you send them in. You do not need to send in your caliper hardware, sensors, nor e-brake components as it is more to come up missing when they have to disassemble for axle assembly. So just send in the backing plates, tin shields, and the one bolt that holds the two together.

A spool on the street can be tough is it's a daily or plans of corner carving.
I went with a spool and 35 splines in my 12 bolt. I do a little street driving to cruise-ins and shows.
Parking can be a chore if a tight space. (no power steering)
I'm also in the range of 450 (+/-) going off ET/MPH/Weight, so 35's were a bit overkill, so it should be close to bulletproof….for now.
Doug, that's what I was thinking, man. It'd be more of a daily than it would be a strip car, so I'm thinking the S-trac will be perfect
A track car would be a different story, haha.
