Milage and RPMs

I want to go with the 4.56's but I also drive the TA to California and North Carolina each year. If 4.56's in 6th are around 2200 rpm I think I can still drive cross country each year with those gears.
Currently have 3.42's and last trip to california I got 28 MPG in the day and 26 at night, 2 mpg less at night due to the pop up headlights. Kept it between 70 and 80 in 6th I think it was running about 1400-1500 rpm's. That was before my engine work though. don't know what my current gas milage is.
Would be happy with 20 mpg after new rear end.
Is that possible?
FYI, My car is a 2001 TA with 6 speed, 17/315/35 rears and 17/275/45 fronts (I think)
