I know I've seen it on here somewhere where it mentions something about lack of power steering, I've tried the search also and can't seem find any info.

After a few high speed runs the power steering gets really stiff to turn. Fluid level is good and everything looks ok, no leaks or anything. After it sits a while (couple hours), the P/S goes back to normal.

Any ideas?

pump maybe or try changing your fluid.

try flushing the old fluid out

What colour is the fluid? Ideally, it should be clear. My guess is that yours is burnt and should be flushed. If that doesn't work, you have bigger problems.
