seat studs
when i had my interior gutted, i want to say the seat studs are welded to the body from underneath. mine just stuck out from the floor, seat bracket sat over it, then a ~12mm nut fastened it down. when i undid the nuts to pull all the seats out, never had to get a wrench on the other side to hold the stud from turning. i remember when undoing the seat belts where they bolted to the floor, that bolt went through the floor into a nut that was welded on the underside of the body.
in your case i don't see any reason you could not use a bolt and nut, would just need a second pair of hands or something to hold the other side from turning. make sure you use grade 5 or better and make sure the body where it goes through is still strong.
